French Quarter Beignet Delights

Ingredients:



1 1/2 cups warm water (110°F/45°C)
1/2 cup granulated sugar
1 envelope active dry yeast
2 eggs, lightly beaten
1 1/4 teaspoons salt
1 cup evaporated milk
7 cups all-purpose flour
1/4 cup shortening
Vegetable oil for frying
Confectioners’ sugar for dusting
Directions:

In a large bowl, dissolve sugar in warm water and then sprinkle yeast over the top. Let stand for 5 minutes, or until foamy.
Add eggs, salt, and evaporated milk to the yeast mixture and mix well.
Gradually add flour to form a sticky dough. Add shortening and knead until smooth.
Cover dough with a damp cloth and let rise in a warm place for about 2 hours, or until doubled in size.
Punch down dough and roll out on a floured surface to 1/4-inch thickness. Cut into 2-inch squares.
Heat vegetable oil in a deep-fryer or large pot to 360°F (182°C).
Fry beignets in batches for 2-3 minutes on each side, or until golden brown.
Drain on paper towels and dust generously with confectioners’ sugar before serving.
