Aunt Betty’s Homestyle German Rocks

Aunt Betty’s Homestyle German Rocks

These classic German Rocks are a beautiful example of a traditional shortbread-style cookie. Despite their rugged name, they’re incredibly tender and buttery. The chopped walnuts create their signature craggy “rocky” appearance and add a nutty crunch that

perfectly balances the subtle sweetness. Since they’re not overly sugary, they pair wonderfully with a hot cup of coffee or afternoon tea.

Ingredients

  • All-purpose flour – 2 cups
  • Unsalted butter, softened – 1 cup
  • Granulated sugar – 1/2 cup
  • Chopped walnuts – 1/2 cup
  • Vanilla extract – 1 teaspoon
  • Salt – 1/4 teaspoon
  • Confectioners’ sugar (optional) – for dusting

How to Make Aunt Betty’s Homestyle German Rocks

Step 1: Prepare the Oven
Preheat your oven to 350°F and line a baking sheet with parchment paper. This helps prevent sticking and keeps the bottoms from browning too quickly due to the high butter content.

Step 2: Cream the Butter and Sugar
In a large mixing bowl, beat the softened butter and sugar until light, pale, and fluffy.

Step 3: Form the Dough
Mix in the vanilla extract. Gradually add the flour and salt, mixing on low speed until a soft dough forms.

Step 4: Add the “Rock” Texture
Gently fold in the chopped walnuts by hand, making sure they’re evenly distributed throughout the dough.

Step 5: Shape and Bake
Roll the dough into small, even balls (about 1 inch in diameter) and place them on the prepared baking sheet, leaving about 2 inches between each one. Bake for 12–15 minutes, or until the edges are lightly golden.

Step 6: Cool and Finish
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack. Once completely cool, dust generously with confectioners’ sugar.
