Ribeye Steak

Ribeye Steak

Ingredients:

Ingredient Quantity

Rib steak 1
Sea salt flakes To taste (generous)
Freshly ground black pepper To taste (generous)
Butter 50g
Thyme 2 sprigs
Garlic, crushed with its skin 1 clove

How To Make Ribeye Steak:

Step 1: Prep the Steak: Take the steak out of the refrigerator at least 1/2 hour before cooking until it reaches room temperature. This is essential for even cooking.

Step 2: Season Generously: When ready to cook, generously season the steak. Sprinkle with lots of salt and pepper on both sides, ensuring an even coverage.

Step 3: Sear the Steak: Heat a frying pan (use a pan large enough to fit the steak comfortably). Add the steak to the skillet and cook over medium-high heat for 2 to 3 minutes on each side.
Guideline: A 3cm thick steak should be cooked after about 5 minutes total for medium-rare.

Temperature Guide: $50^\circ\text{C}$ for rare, $60^\circ\text{C}$ for medium, and $70^\circ\text{C}$ for well-done.

Step 4: Baste with Butter and Aromatics: After turning the steak for the first time, add the 50g butter, 2 sprigs of thyme, and 1 crushed garlic clove to the pan. Cook for one minute.

To baste, tilt the pan towards you until the butter collects at the bottom, then repeatedly spoon the butter mixture over the steak.1

Step 5: Rest: Remove the steak from the skillet and allow it to rest for 5 minutes. Do not skip this step! Resting allows the meat fibers to relax and reabsorb their juices, ensuring a juicy steak when sliced.2
Step 6: Serve: Cut the steak into strips, season lightly if necessary, and serve with your choice of side dishes and sauce.
